After 10 months of maturation salt and lime crystals begin to form in the cheese which gives this cheese a special bite. As the maturation process stopped around 1 year this cheese still has his soft creaminess, which makes it perfect for beginning cheese connoisseurs and everyday munching. Mind you, this cheese is perfect accompanied by a good glass port or wine, but also on a cracker, a sandwich or in your pasta.
