Appenzeller is a cheese that is made by a 700 year old tradition in Appenzeller land in the North East of Switserland. Appenzeller is known for its spicy flavor that arises by rubbing the crust with a combination of a.o.t. white wine, salt, white pepper and herbs. On a cheese plate this cheese is delicious and goes well with beer, a simple light red wine, ciders and a full fruity Chablis.
