Description

The Koopman family from the village De Weere in North Holland are still the only farmers who make real raw milk cheese from Edam cheese in a traditional way. All other Edammers are pasteurized. The taste is rich and full, slightly spicier and dryer drier than Gouda cheese. The cheese is matured between 6 weeks and 6 months.
