Jamón Ibérico, also known as Pata Negra, is made from the black Iberian pig and seen as one of the best matured hams in the world. ‘Pata Negra’ or ‘black paw’ refers to the black paws the Iberian pigs have. Their meat is rich with monounsaturated fatty acids, mainly located between the muscle fibers and they make sure the meat melts in your mouth.
